Hey, Y’all! I hope you are feeling good and ready for a new week!

I have gotten sick all of a sudden, so this week’s plan is all about simplicity! And the simplest kind of recipes are usually made in a slow cooker! If you don’t have a slow cooker, you can totally convert these to oven baked recipes, just adjust the cooking times accordingly.

Corn & Potato Chowder

1 lb. potatoes, peeled and cut into cubes

1 can creamed corn

1 can diced tomatoes

2 C chicken broth

1 onion, chopped

2 ribs celery, diced

1 tsp basil

1 tsp salt

1/2 tsp pepper

1 C heavy cram

1/4 C butter

Stir all ingredients together, minus cream and butter, in slow cooker. Cover and cook on high 8-10 hours. When potatoes are tender, stir in cream and butter. Serve warm.

Layered Chicken Bake

4 C shredded chicken

1 onion, diced

1 bell pepper, diced

20 oz homemade cream of chicken, or canned

1 can diced tomatoes

1 clove garlic, minced

1 tsp chili powder

12 6 in flour tortillas, cut in strips

2 C shredded sharp cheddar cheese

Mix chicken, onion, pepper, cream soup, tomatoes, garlic and chili powder together.

Layer 1/3 of tortilla slices (4 tortillas total) on bottom of crock pot, 1/3 of chicken mixture then 1/3 of cheese. Layer twice more. Cook on low for 3-4 hours. Uncover and cook 30 mins more.

Paprika Chicken Thighs and Veggies

1 onion, sliced

1 lb. potatoes, sliced

1 lb. baby carrots

1/2 C chicken broth

1 clove garlic, minced

1 tsp dried thyme

2 tsp salt 1 tsp pepper

1 tsp paprika

6 chicken thighs

Cover bottom of slow cooker with sliced onions. Add sliced potatoes and carrots. Mix broth with 1 tsp salt and 1/2 tsp pepper and garlic. Pour over vegetables. Mix remaining spices together and rub onto chicken. Place chicken on top of vegetables. Cook on high 1 hour then on low for 6 more hours.

Meaty Dirty Rice

1 lb ground beef

1 lb pork sausage

1 tsp paprika

1/4 tsp onion powder

1/4 cayenne pepper

1/2 tsp oregano

1/2 tsp salt

3 ribs celery

1 onion, diced

1 bell pepper, diced

2 C rice, uncooked

1 can tomatoes and chilis

1 C chicken broth

Brown meat with spices until crumbled and done. Place in slow cooker. Stir in remaining ingredients. Cover and cook 2 hours on low, until rice is tender.

Ham & Pimento cheese Grits

4 1/2 C chicken broth

3 TBS butter, melted

1 1/2 C uncooked grits

1 lb ham, chopped

2 2oz jars pimento, drained

1 C sharp cheddar cheese, shredded

1 C mozzarella cheese, shredded

1/2 C heavy cream

In slow cooker, stir broth & butter together. Stir in grits. Add ham. Stir well. Cook on low 6 hours, stirring 3 hours in. Add cheese & cream. Serve warm.

Turkey Chili

1 lb ground turkey, browned

1 onoin, chopped

1 garlic clove, minced

1 tsp cumin

2 tsp chili powder

1 tsp salt

1 large can diced tomatoes

1 can black bean, or 2 C

1 8 oz can tomato sauce

Cook turkey, onions and garlic in skillet. Add to slow cooker. Stir in remaining ingredients. Cook on low for 6 hours.

Pulled Pork Sammies

1 Pork Roast (1 1/2-2 lbs)

1 bottle bbq sauce

1 tsp brown sugar

hamburger buns

Place roast in slow cooker. Cook on low 10 hours, or on high for 5 hours. Remove roast and discard liquid. Shred pork and return to slow cooker. Add bbq sauce and sugar. Stir well. Cook on low 2 hours or high 1. Serve on hamburger buns. Delicious with cole slaw!

  1. I think your website is great! The recipes are easy to understand and it doesn’t need to be fancy. When you have a week with lots of chicken, like we often do, you could suggest that any protein will work in your recipes. 😁

  2. I don’t really love grits, but I’ve never seen this variation, definitely trying again! Ty for your hard work!
